The what and how of eating sans meat

Galveston County Daily News (Internet / Print) 03/22/06 http://news.galvestondailynews.com/story.lasso?ewcd=16d3ea108c5a25b1&page=all Jade Wells, a dietetic counselor at the University of Texas Medical Branch at Galveston who helps teenagers considering adopting a vegetarian diet, made the very same dietary choices when she was 13. As a novice vegetarian, Wells was completely unaware that she needed to compensate for the foods she was giving up. It wasn’t until beginning college and working toward a degree in dietetics that Wells realized how unprepared she had been. Now, it’s like a reflection of her former self when she encounters teenagers who think they can get by eating the same meals served to everyone else in the family, just leaving off the meat, the chicken or the fish. “Those are frequently the kids I see who are pale and lack energy, signs that they may actually be anemic,” she said. “Part of what they need to learn is that you make up for the foods you’ve subtracted with dishes that include soy products, nuts, seeds, peanut butter, eggs, yogurt and cheese."
